Spring roll noodles are a tasty mixture of spiciness and flavor, all wrapped in a fresh, delicate roll.

Recently, I stumbled upon a captivating spicy noodle spring rolls TikTok video showcasing the creation of these delicious noodles for spring rolls and I felt an urge to give noodle wrap a try. 

These Spring rolls with spicy noodles are a delightful fusion of two of my most cherished culinary delights: summer rolls and zesty spicy noodles! 

Keep in mind that the heat level of the spicy noodles is on the higher side, but you can always adjust the amount of sauce to suit your spice tolerance.

How to make spicy noodle spring rolls?

Spicy Spring Rolls Noodles

You can make these tasty spring rolls spicy noodles in just under 30 minutes. They’ll be a great addition to your next dinner party. 

Serve spicy spring rolls as an appetizer or snack, and let your guests enjoy the delicious flavors of bok choy, scallion, and wood ear mushroom cooked in a spicy mixture of sriracha and soy sauce.

Ingredients:

  • 5 rice paper sheets 
  • 1 pack of Samyang Korean noodles (I used carbonara flavor) Note: 
  • 1 cup grated cheddar or mozzarella cheese
  • 100g (1 cup) enoki mushrooms
  • 1 tsp + 1 tbsp vegetable oil
  • 3 tbsp Japanese mayo
  • 2 tsp Samyang spicy Buldak sauce
  • Furikake seasoning

Instructions:

  • Begin by cooking the noodles according to the instructions on the packaging. 
  • Once cooked, drain the noodles and mix in the provided seasoning packs. Stir to incorporate the flavors. 
  • Use scissors to roughly cut the noodles into smaller pieces, and then set them aside.
  • Prepare the enoki mushrooms by slicing off the bottom of the mushrooms, washing them, and patting them dry. 
  • In a pan, heat 1 tsp of vegetable oil over medium heat and sauté the mushrooms for about 5 minutes, making sure not to let them brown. Once done, set them aside.
  • Take a rice paper sheet and dip it in a bowl of warm water for a few seconds until it becomes pliable. Place it on a clean, flat surface, like a large plate.
  • In the center of the rice paper, put approximately 3 tablespoons of the cooked noodles (about 1/5 of the noodles). Top the noodles with 1/5 of the sautéed mushrooms and a sprinkling of cheese.
  • Fold in the edges of the rice paper over the fillings and then roll up the spring roll tightly, ensuring that all the fillings are enclosed. 

Repeat The Process

  • Repeat this process for the remaining rice paper sheets and ingredients.
  • Heat a large frying pan over medium-high heat and add the remaining 1 tbsp of vegetable oil. 
  • Once hot, fry the spring rolls for approximately 4-5 minutes on each side or until they become light golden brown. 
  • Remove the spring rolls from the pan and drain them on a kitchen towel.
  • Sprinkle the spring rolls with Furikake seasoning for added flavor.
  • To make the dipping sauce, combine the Japanese mayo with the Samyang spicy Buldak sauce. 
  • Adjust the amount of spicy sauce to your taste.

Ingredients:

  • 1/2 cup water
  • 1/4 cup rice vinegar
  • 1/4 cup white vinegar
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons chili garlic sauce
  • 1/4 teaspoon fish sauce
  • 1-4 garlic cloves, smashed (adjust to your garlic preference)

Instructions:

  • In a small saucepan, combine the water, rice vinegar, white vinegar, and granulated sugar.
  • Heat the mixture over medium heat, stirring continuously, until the sugar has completely dissolved. This should take about 3-4 minutes.
  • Once the sugar is dissolved, remove the saucepan from the heat and let the mixture cool for a few minutes.
  • Add the chili garlic sauce, fish sauce, and the smashed garlic cloves to the mixture. The number of garlic cloves can be adjusted to your desired level of garlic flavor. Use fewer cloves for a milder taste and more for a stronger garlic flavor.
  • Stir the sauce well to combine all the ingredients. Let it sit for at least 10-15 minutes to allow the flavors to meld.

Samyang Buldak Noodles Is a better option!

We love using Badlak noodles in our spring rolls because they add a spicy and flavorful kick that makes our food exciting. 

Badlak noodles have been my first love for years now. Because, unlike the Samyang 2x spicy flavor, these noodles do contain chicken-derived ingredients and aren’t suitable for vegetarians. 

However, I find the addictive nature of their fiery sauce so compelling that I would happily consume it daily if I could. 

Indomie Mi Goreng Instant Stir Fry Noodles

If you cannot tolerate spice at all, it recommends substituting the spicy noodles with Indo Mie Mi Goreng noodles, which are presumably milder in flavor. Essentially, it offers solutions for those with varying spice preferences to make the dish more suitable for their taste.

Ramen Noodles: A staple in Japanese cuisine, spring rolls ramen noodles are thin, wheat-based noodles that come in various shapes and sizes.
